I have been extremely hot on spaghetti squash. Honestly, it is a fabulous low calorie substitute for one of my all time favorite binge foods, pasta. Fatty. There were always so many recipes that I would overlook just because the main ingredient was pasta. Well not anymore. (OMG, I sound like an infomercial). One of the biggest complaints I always heard about spaghetti squash is that it was cumbersome to cook and prepare. False. Let me just get that out there. Completely false. I slice mine in half and wrap each side in Saran Wrap ( no I do not advertise for them) and microwave each side individually for 9 minutes. Let me tell ya, it comes out the perfect consistency and so easily. Just like spaghetti. Soooo since my door has been opened to so many new recipes while implementing this low calorie pasta solution, I thought I would share them all with you beauties. Feast your eyes. And your face.

Another quick and easy recipe I have been utilizing is taking the cooked spaghetti squash and mixing it with wedges of the flavored Skinny Cow Cheese. They come in Garlic and Herb, Cheddar, Mozzarella Sun-Dried Tomato and Basil. List goes on. But just mixing a few wedges, which are 35 calories each, with the spaghetti squash and some salt and pepper, you feel like you are eating macaroni and cheese. I am not even kidding. Guilt free, ladies. You will thank me later.

ReplyDeleteI think I'm going to have to revisit spaghetti squash in my arsenal of recipes... I love the idea of adding the Laughing Cow wedges! Yum! I'm such a mac & cheese lover, but it's soooo bad for you, especially on Weight Watchers. Thank you so much for the suggestion. :)
ReplyDeleteProbably not great that I am looking at this starving....that looks SO good. I must try it, a friend of mine makes it regularly and swears by it.....and anything that entails less guilt is a winner in my book.
